What You'll Need:
- 1 Zucchini (grated)
- 1 cup of broccoli, finely chopped
- ½ red onion
- ¼ cup fresh dill
- ½ cup parmesan cheese
- 5 eggs
- 2/3 cup buckwheat flour
- Salt and pepper
- 1-2 tbsp Olive oil
- Optional toppings: avocado, sprouts, greens, goats cheese
How to Prepare:
- Add the zucchini, broccoli, red onion, dill, parmesan cheese, salt and pepper to a mixing bowl and stir well.
- Once mixed add in the eggs and buckwheat flour, mix until you form a nice consistency.
- Heat a fry pan with olive oil on medium heat.
- In small batches, add 2-3 tbsp of mixture to the pan and fry until golden.
- Serve with optional toppings
Tip: Batch make this recipe and keep fritters in the fridge for an easy breakfast or lunch. The fritters will stay well for up to 3 days in the fridge!
