Packed with high-quality proteins, eggs are essential for building and repairing tissues, making them an excellent choice for muscle development. They are a rich source of vitamins and minerals, including vitamin B12, which is crucial for nerve function and the production of red blood cells. What You'll Need:

  • 1 Zucchini (grated)
  • 1 cup of broccoli, finely chopped
  • ½ red onion 
  • ¼ cup fresh dill
  • ½ cup parmesan cheese
  • 5 eggs
  • 2/3 cup buckwheat flour
  • Salt and pepper 
  • 1-2 tbsp Olive oil 
  • Optional toppings: avocado, sprouts, greens, goats cheese

How to Prepare:

  1. Add the zucchini, broccoli, red onion, dill, parmesan cheese, salt and pepper to a mixing bowl and stir well. 
  2. Once mixed add in the eggs and buckwheat flour, mix until you form a nice consistency. 
  3. Heat a fry pan with olive oil on medium heat. 
  4. In small batches, add 2-3 tbsp of mixture to the pan and fry until golden.
  5. Serve with optional toppings

Tip: Batch make this recipe and keep fritters in the fridge for an easy breakfast or lunch. The fritters will stay well for up to 3 days in the fridge!
