Indulge in a sweet treat that nourishes your body with these scrumptious collagen cookies! Perfect for satisfying your sweet tooth while supporting your health, these cookies are packed with wholesome ingredients that you can feel good about.

Here’s why we love this recipe:

Nutrient-rich ingredients: Buckwheat flour, flaxseed meal, and collagen powder provide a powerhouse of nutrients. Buckwheat is a gluten-free grain loaded with fiber and antioxidants, flaxseed meal is high in omega-3 fatty acids and lignans, and collagen supports skin, hair, and joint health.

Natural sweetness: Pure organic maple syrup offers a healthier alternative to refined sugar, adding a rich, caramel-like flavour.

Healthy fats: Using butter, ghee, or your favorite healthy oil ensures these cookies are both delicious and beneficial for your well-being.

What You'll Need:

  • 2 cups of buckwheat flour
  • ½ cup of flaxseed meal
  • ½ cup of collagen powder
  • 1 cup of butter, ghee, or healthy oil of your choice if dairy free (grass fed and finished is a fantastic option)
  • ¾ cup of pure organic maple syrup
  • 1 tsp of apple cider vinegar
  • 1 tsp of vanilla extract
  • ½ teaspoon of celtic sea salt ½ cup of chocolate chips… although my husband prefers 1 cup!

How to Prepare:

  1. Allow your butter to soften out of the fridge and lightly whisk with a fork.
  2. Add maple syrup, vanilla essence, and apple cider vinegar until blended through.
  3. Gradually add in the buckwheat flour, flaxseed meal and collagen powder, ensuring that the mixture is well blended through.
  4. Add your chocolate chips and sprinkle in sea salt as a final step in mixing the ingredients!
  5. The mixture should form a dough that is easy to roll into balls without having too much mixture stick to the hands. If the mixture turns out too wet, adjust by adding some more dry ingredients such as flour and try coating the hands before rolling out the dough into balls.
  6. Bake in the oven for 15-20 minutes, possibly swapping the trays over halfway through if you have a small convection oven like me!
  7. Serve fresh and hot from the oven with a cup of your favourite herbal tea or coffee and enjoy!
