What You'll Need:

For the salad:
  • 2 ripe mangoes, peeled and sliced into cubes
  • 1 red capsicum, diced
  • 1 cucumber, sliced thinly
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh coriander (optional), chopped
  • 1/4 cup pomegranate seeds (for a festive pop of red)
For the dressing:
  • 2 tablespoons lime juice
  • 1 tablespoon rice vinegar (or white vinegar)
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 teaspoon sesame oil (optional for nuttiness)
  • 1/2 teaspoon chili flakes (adjust to taste) Salt and pepper to taste
Top with:
  • 2 tablespoons roasted cashews or peanuts, roughly chopped
  • A sprinkle of sesame seeds

How to Prepare:

  1. Prepare the Dressing: In a small bowl, whisk together lime juice, rice vinegar, honey, sesame oil, chili flakes, salt, and pepper. Set aside.
  2. Assemble the Salad: In a large bowl, combine the mango slices, red capsicum, cucumber, cherry tomatoes, red onion, mint, coriander, and pomegranate seeds.
  3. Toss with Dressing: Drizzle the dressing over the salad and gently toss to coat everything evenly.
  4. Garnish and Serve: Top the salad with roasted cashews or peanuts and a sprinkle of sesame seeds. Serve chilled!
