Yes you read that right! This bread is not only delicious, and gut health friendly, but it also can help assist detoxification of hormones and help balance out estrogen.
One of the key ingredients in this recipe is broccoli, which has been shown to promote healthy oestrogen balance by supporting liver detox, improving oestrogen breakdown, and enhancing elimination. It does this by converting Indole-3-Carbinol (I3C) in the body to diindolylmethane or you may have heard of it as DIM, which helps balance oestrogen. It is this conversion that helps shift oestrogen metabolism toward "good" estrogen metabolites while reducing "bad" estrogen metabolites, which are associated with higher inflammation, oestrogen dominant conditions & oestrogenic cancers.
Aside from that it is yummy & uses minimal ingredients, which we love!
Ingredients:
1 large or 2 small heads of broccoli
4 eggs
1 cup wholemeal flower
¼ cup LSA
1 Tbsp baking powder
1 tsp celtic salt
Quinoa to top
Method:

Preheat oven to 180 degrees

Blend up broccoli in food processor or blender until chopped

In a large bowl add in all ingredients (apart from quinoa) & mix together.

Add mixture to a lined bread tray (it's okay if the mixture is a bit thick, if too thick to combine add more egg).

Sprinkle quinoa on top for extra crunch.

Bake for approximately 25-30 minutes - until you can stick a knife in it and it comes out clean.

Top with cottage cheese and enjoy!
