Banana Pancakes The Whole Family Will Enjoy!

Posted by Riannon Page on

These banana pancakes are easy to make, contain only a few simple ingredients and are a great way to get kids eating a healthy balanced breakfast.

If you have any leftover, pop them in a container and save them as a snack or pack them for school snacks. Top with coconut yogurt, mixed berries and a touch of organic maple syrup or raw honey if needed. You can also enjoy these with nut butter or just as is.

Star ingredients:

Collagen: Collagen is a great way to sneak more protein into your kids’ breakfast without them even knowing! Including a source of protein helps to balance the sugar content from honey or maple syrup that might be added. Collagen provides a range of wonderful benefits for kids and adults including digestive health, sleep support, skin repair, regulation of moods and enhances bone health. The Imbibe Miracle Collagen is our favourite, available in 100g and 300g glass jars!

Hemp seeds: Hemp seeds are rich in protein and omega-3 fatty acids perfect for taking these pancakes to the next level. We love adding hemp seeds into cooking for kids as they are packed with nutrients and easy to eat especially when disguised into pancakes.

What You'll Need:

  • 2 bananas
  • 1 cup of oats
  • ¼ cup buckwheat flour
  • 2 eggs
  • 2 tbsp of hemp seeds
  • ¾ cup of nut milk of choice
  • ½ tsp of cinnamon
  • 2 serves of collagen powder.
  • Organic butter

How to Prepare:

  1. Place all ingredients into a high speed blender
  2. Blend until smooth, add more buckwheat flour or liquid if required
  3. Heat a pan on medium heat and add a tsp of butter
  4. Wait until the pan is heated before pouring the pancake batter into the pan
  5. Flip and cook both sides once bubbles appear.
  6. Add toppings of your choice and serve up!

Note: Place in zip lock bags in the freezer. Pull these out and heat with a sandwich press for an easy morning breaky or snack!
