We love a bean salad, especially as a meal prep in the warmer months! This bean salad is so delicious, quick and easy to prepare and eat all week with corn chips!
Start by marinating ½ kg of hormone free chicken thighs for about 30-40 minutes & then cook them on the BBQ.
What You'll Need:
Marinade:
- 1/4 jar of organic Chipotle sauce
- 1/2 lemon juice
- Salt and pepper
- 1/2 cup fresh parsley chopped
- 2 garlic cloves minced
- 1 tsp honey
- Optional 1 tsp pickled jalapeno juice
Salad ingredients:
All ingredients diced teeny tiny cubes (Kmart sells a veggie dicer to make this part easier/quicker for you).
- 1 large red capsicum
- 1 large yellow capsicum
- 1 cucumber
- 1 red onion
- 1 punnet cherry tomato
- 2 corn cobs - BBQ them for more flavour
- 1 cup black beans (cooked and drained)
- 1 can pinto beans (cooked and drained)
- 1 bunch Tuscan kale (regular kale is also okay if you can’t find tuscan)
- 1 block feta (Greek not Danish - crumbles better)
Dressing:
- The rest of Chipotle jar
- Juice of 1 lemon
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper
- 1 tsp honey
- 1 heaped teaspoon tahini
- Dash of water for consistency
How to Prepare
- Add all ingredients to a big salad bowl. Dice up your chicken and add to the salad then top with dressing.
- Enjoy with corn chips!!
