Recipe (Serves 4)
Ingredients:

2 tbsp fresh ginger, finely chopped

4 cloves garlic, minced

1 red or brown onion, diced

1 tbsp fresh turmeric (or 1 tsp dried turmeric)

4 stalks celery, finely chopped

2 carrots, halved and chopped

2 handfuls shiitake mushrooms, sliced

1 litre chicken bone broth

1 litre chicken stock

500g chicken breast

Juice of 2 lemons

1 bunch fresh herbs (thyme, basil, parsley, coriander all work well)

2 packets rice noodles
Method:

In a pan over medium-high heat, sauté the onion, garlic, ginger, and turmeric in olive oil until soft and fragrant.

Transfer the sautéed mixture to a slow cooker.

Add the remaining ingredients to the slow cooker—vegetables, liquids, chicken breast, and lemon juice.

Cook on high for 4 hours or low for 6 hours, until the chicken is fully cooked and easy to shred.

Shred the chicken, then stir in the herbs and rice noodles. Let it cook until noodles are tender.
