Immune-Boosting Chicken Noodle Soup

Recipe (Serves 4)

Ingredients:

  • 2 tbsp fresh ginger, finely chopped

  • 4 cloves garlic, minced

  • 1 red or brown onion, diced

  • 1 tbsp fresh turmeric (or 1 tsp dried turmeric)

  • 4 stalks celery, finely chopped

  • 2 carrots, halved and chopped

  • 2 handfuls shiitake mushrooms, sliced

  • 1 litre chicken bone broth

  • 1 litre chicken stock

  • 500g chicken breast

  • Juice of 2 lemons

  • 1 bunch fresh herbs (thyme, basil, parsley, coriander all work well)

  • 2 packets rice noodles

Method:

  1. In a pan over medium-high heat, sauté the onion, garlic, ginger, and turmeric in olive oil until soft and fragrant.

  2. Transfer the sautéed mixture to a slow cooker.

  3. Add the remaining ingredients to the slow cooker—vegetables, liquids, chicken breast, and lemon juice.

  4. Cook on high for 4 hours or low for 6 hours, until the chicken is fully cooked and easy to shred.

  5. Shred the chicken, then stir in the herbs and rice noodles. Let it cook until noodles are tender.

  6. Serve hot, garnished with fresh herbs. Enjoy!
