Packed with protein, healthy fats, and natural sweeteners, these bites are a great way to fuel your body without the sugar crash.

Cacao Powder:

Cacao powder not only gives these brownie bites a rich, chocolatey flavour but also provides a wealth of antioxidants and magnesium. Magnesium is an important mineral for managing blood sugar levels, as it helps regulate insulin sensitivity.

Collagen Powder:

Collagen isn’t just for skin health, it's also vital for hormonal regulation and joint health.Adding collagen powder to these bites is an easy way to get a dose of this essential protein!

Ingredients:

  • 6 Medjool dates, pitted

  • 3 tbsp almond meal

  • 2 tbsp cacao powder

  • 2 tbsp collagen powder (preferably unflavoured)

  • 3 tbsp maple syrup (or honey)

  • 2 tbsp nut butter (almond butter, peanut butter, or cashew butter)

  • 60g dark chocolate (70% cocoa or higher)

Instructions:

  1. Prepare the Dates: Start by placing the dates in a bowl of warm water for about 10 minutes to soften them. Once softened, drain the water and chop them into small pieces.

  2. Blend the Base: In a food processor or bowl, combine the dates, almond meal, cacao powder, collagen powder, maple syrup, and nut butter. Pulse until the mixture is well combined and has a sticky, dough-like consistency.

  3. Shape the Brownie Bites: Roll the mixture into small bite-sized balls, about the size of a walnut. Place them on a parchment-lined tray or plate.

  4. Melt the Chocolate: Melt the dark chocolate by placing it in a heatproof bowl until fully melted and smooth.

  5. Coat the Bites: Dip each brownie bite into the melted dark chocolate, coating it evenly. Place the chocolate-coated bites back on the parchment paper.

  6. Chill and Set: Refrigerate the brownie bites for at least 30 minutes, or until the chocolate has hardened and the bites are firm.

  7. Enjoy: Once chilled, your protein brownie bites are ready to enjoy! Keep them stored in an airtight container in the fridge for up to a week.
