Wholesome, protein-rich, and delightfully simple!
There’s something magical about waking up to breakfast already made – especially when it’s packed with nourishing ingredients the whole family will love (even many of those fussy kiddos out there!). These Overnight 'Special' Oats are a creamy, satisfying, and subtly sweet way to start the day, and they’re perfect for busy mornings.
Infused with the goodness of quality protein, healthy fats, and gut-loving fibre & probiotics, this recipe has been a staple in our home—and it might just become one in yours too.
Ingredients:

1 ½ cup rolled oats (certified gluten-free if needed)

¾ cup coconut milk or A2 milk

½ cup organic Greek-style yoghurt

1–3 ml vanilla extract (adjust to taste)

¼ cup desiccated coconut

3 heaped tablespoons of quality protein powder (we love Clean Lean Protein for its clean, plant-based profile)

1 tablespoon of honey or maple syrup
Method:

In a medium bowl or jar with a lid, combine all ingredients. Stir until smooth and evenly mixed.

Cover and place in the fridge overnight (or for at least 4–6 hours).

In the morning, give it a quick stir and enjoy chilled, or gently warm if you prefer.

Garnish with extra desiccated coconut, nuts or seeds and some berries!
