Protein Fibre Cookies

Ingredients

  • 1 ripe banana, mashed
  • 1 serve protein powder
  • ¼ cup fibre blend
  • ¼ cup peanut butter
  • ½ cup rolled oats
  • Optional: chocolate chips or other mix-ins

Method

  1. Preheat oven to 180°C.
  2. Mash the ripe banana in a bowl until smooth.
  3. Add protein powder and mix well.
    • If using vegan protein, add 1 tbsp milk to help create a sticky consistency.
  4. Stir in the fibre blend and mix thoroughly.
  5. Add peanut butter and combine well.
  6. Fold in the rolled oats and mix until evenly incorporated.
  7. Chill the mixture in the fridge for 10–15 minutes.
  8. Stir in chocolate chips or desired mix-ins.
  9. Scoop onto a lined baking tray and gently flatten.
  10. Bake for 15 minutes at 180°C.

Let cool slightly before enjoying.
