Ingredients (serves 2–4):
For the tacos:
- 4 small whole-grain or corn tortillas
- 250g lean red mince (beef or lamb)
- 1–2 tsp Mingle seasoning
- ½ cup shredded cabbage
- ½ cup shredded lettuce/ kale
- ¼ cup shredded cheese (optional)
- Avocado
For the tomato salsa:
- 1 cup cherry tomatoes, halved
- 1 spring onion, finely chopped
- 1 small jalapeño, deseeded and finely chopped
- Juice of ½ lime
- 1 handful of coriander, chopped finely
- Salt and pepper to taste
Instructions:

Make the salsa by combining cherry tomatoes, spring onion, jalapeño, lime juice, salt, pepper, and cilantro (if using). Set aside.

Place a tortilla in a hot non-stick pan. Spread raw mince on top and season with Mingle seasoning.

Fry together until the mince is cooked through and the tortilla is crispy.

Remove from the pan and top with shredded cabbage or lettuce, cheese (if using), and the tomato salsa.
