Healthy Smashed Taco’s

These smashed tacos make a quick, protein-rich lunch that helps keep you full and supports steady energy throughout the afternoon, helping to prevent mid-day energy dips. Packed with lean red mince, fresh veggies, and vibrant tomato salsa, adding leafy greens and a touch of cheese or avocado boosts fibre and healthy fats, making this a well-rounded, nourishing meal to fuel your day.

Ingredients (serves 2–4):

For the tacos:

  • 4 small whole-grain or corn tortillas
  • 250g lean red mince (beef or lamb)
  • 1–2 tsp Mingle seasoning
  • ½ cup shredded cabbage 
  • ½ cup shredded lettuce/ kale
  • ¼ cup shredded cheese (optional)
  • Avocado 

For the tomato salsa:

  • 1 cup cherry tomatoes, halved
  • 1 spring onion, finely chopped
  • 1 small jalapeño, deseeded and finely chopped
  • Juice of ½ lime
  • 1 handful of coriander, chopped finely 
  • Salt and pepper to taste

Instructions:

  1. Make the salsa by combining cherry tomatoes, spring onion, jalapeño, lime juice, salt, pepper, and cilantro (if using). Set aside.
  2. Place a tortilla in a hot non-stick pan. Spread raw mince on top and season with Mingle seasoning.
  3. Fry together until the mince is cooked through and the tortilla is crispy.
  4. Remove from the pan and top with shredded cabbage or lettuce, cheese (if using), and the tomato salsa.
  5. Serve immediately with lime wedges.
