Almond Butter Cookies

Who says cookies can't be nourishing? These Almond Butter Cookies are made with wholesome ingredients that provide a balance of healthy fats, fibre and plant-based protein to help support stable blood sugar an important foundation for hormone health. 

Almond butter and hemp seeds provide healthy fats and minerals including magnesium and zinc, while oats are a great source of soluble fibre to support gut health and steady energy levels. Naturally sweetened with maple syrup and made with dark chocolate, they're the perfect feel good treat that's as nourishing as it is delicious. 

 

- 1 ¾ cup oats 

- ¼ cup buckwheat flour 

- 3.4 tsp baking powder 

- ½ tsp cinnamon 

- ½ tsp salt 

- ½ cup nut butter (almond, cashew or natural peanut butter) 

- 6 Tbsp maple syrup

- 3 Tbsp coconut oil 

- 3 Tbsp hemp seeds

- 1 tsp vanilla extract

- ½ cup dark chocolate chips 


  1. Preheat oven to 180 degrees, and line the baking sheet with baking paper

  2. Put 1 cup of oats, buckwheat flour, baking powder, cinnamon, and salt in a food processor. Pulse until oats are ground. 

  3. In a separate bowl, whisk almond butter, maple syrup, coconut oil, and vanilla extract. Add in the dry ingredients and remaining oats. Stir to combine. 

  4. Mix in the dark chocolate. 

  5. Scoop dough into tablespoon-sized portions and place on the baking sheets. And press down lightly with your thumb. 

  6. Bake until golden brown and crunchy, approximately 20 minutes. 

  7. Let cool on a wire rack before serving.
