Slow Cooker Sausage Casserole

An easy bake, no fuss dinner for the whole family! Packed with flavour and veggies, this recipe is super easy to make, pop it in the slow cooker before work and it will be ready by the time you get home.

It’s great for fussy eaters, with lots of room to hide in extra veg and gut loving ingredients. This recipe works great paired with either cubed potatoes or nice creamy mash!

What You'll Need:

- 8 organic/grass fed beef or chicken sausages

- 1 brown onion diced

- 3 garlic cloves diced

1 capsicum diced

1-2 grated zucchinis

3 sticks of diced celery

¼ of a butternut pumpkin chopped into bite size pieces

2 tins of diced tomatoes

3 tbs tomato paste

2 tsp paprika

2 tbs Gevity bone broth (or equivalent)

⅓ cup of water

How to Prepare:

Chop the sausages into bite size pieces. The meat does go a mushy texture with cooking so brown in a pan prior to slow cooking if you prefer a more formed texture.

Pop everything into a slow cooker and gently stir to combine.

Cook on high for 4 hours, or slow for 6 hours.

Serve with potatoes and chives!
