What You'll Need:
Dry ingredients
- 1 cup flour (can sub for GF flour)
- 1.5tsp of baking powder
- 1/2tsp baking soda
- Salt
Wet ingredients
- 1 cup milk
- ¼ cup Extra Virgin Olive Oil
- 1 egg
- ¼ cup cottage cheese
- Salt and pepper
- Seasoning of your choice
Veggies
- 1 zucchini - grated
- 1 carrot - grated
- ¼ cup cherry tomato diced
- ½ red onion sliced
How to Prepare:
- Preheat oven to 180 degrees.
- Mix dry ingredients together, form a well and add in wet ingredients.
- Mix until combined.
- Add in your veggies and continue to mix.
- Add to a prepared tin loaf (alternatively use muffin trays) and bake for 15-20 minutes.
- Stick a knife in the loaf to ensure it is cooked through.
