If you've just given birth, your body has been through a lot, and it's important to take care of yourself. Ingredients:
- 4 cloves of garlic, finely chopped
- 1 white onion, diced
- ½ tsp of grated ginger
- 300 g shiitake mushrooms, sliced
- 3 baby bok choy (or vegetable of choice)
- ½ roasted chicken, shredded (or tofu if vegan)
- 2 cups of cooked brown rice
- 1 liter vegetable or chicken stock
- 3 cups of water
- 2 tablespoons of soy sauce
- A dash of olive oil
Toppings (optional):
- Sliced spring onion
- Coriander
- Fresh or dried chili
- Toasted sesame
Instructions:
- In a big pot, add a dash of olive oil along with diced onion. Sauté until translucent.
- Add garlic and ginger to the pot and sauté for another 1-2 minutes.
- Add the shiitake mushrooms and sauté until brown.
- Add the stock, 3 cups of water, soy sauce, and bring it to a simmer.
- Let it simmer for 10 minutes. In the meantime, remove the stem from the baby bok choy and separate the stalks from leaves.
- After 10 minutes, add the stalks to the pot, let it simmer for another 2 minutes before adding the leaves, the chicken, and brown rice.
- Bring the pot back to a simmer and then turn off the heat.
- Serve with sliced spring onion, coriander, toasted sesame or some chili flakes for extra spice.
