¾ cup almond flour

½ tsp baking soda

1 tbsp ground flaxseed

1 tbsp chia seeds

⅓ cup pumpkin seeds (raw or lightly toasted)

¼ cup dark chocolate chips (70% or higher)

¼ tsp sea salt

1 tsp cinnamon
Wet ingredients:

½ cup almond butter (or other nut/seed butter)

⅓ cup maple syrup (or raw honey)

1 tsp vanilla extract

2 tbsp coconut oil, melted
Instructions

Preheat your oven to 180°C and line a baking sheet with parchment paper.

In a large bowl, combine oats, almond flour, baking soda, flaxseed, chia seeds, pumpkin seeds, sea salt, and cinnamon.

In another bowl, whisk together almond butter, maple syrup, vanilla extract, and melted coconut oil until smooth.

Combine wet and dry ingredients. Fold in the dark chocolate chips.

Scoop about 1–2 tablespoons of dough per cookie onto the baking sheet. Flatten slightly with your hand or a spoon.

Bake for 10–12 minutes, or until edges are golden.

Let cool completely on a rack. Store in an airtight container for up to 5 days (or freeze for later!).
